Preheat oven to 180ºC.

Fold a large piece of parchment paper. Lay zucchini and potatoes on the parchment paper, then top with shallot, dill/thyme and lemon slices.

Season with salt, pepper, oil and thyme.

Fold parchment over salmon.

Bake for 15 to 17 minutes.
