Banana Bread

Preheat oven to 180ºC. Grease a 9-inch loaf pan with coconut oil.

In a large bowl, combine mashed banana, applesauce, honey, eggs, almond milk, coconut oil, orange zest and vanilla until well combined and creamy.

In a separate medium bowl, whisk together whole wheat flour, oats, baking powder, baking soda, salt, cinnamon, poppy seeds, coconut flakes and walnuts.

Add wet ingredients to dry ingredients and mix until just combined.

Pour into prepared loaf pan. Decorate with 2 slices of banana and sprinkle oats over top.

Bake for 60-70 minutes

Remove from oven and place on wire rack to cool completely.

- 2 mashed bananas + 1 banana to decorate the top
- 180 g honey
- 150 g unsweetened applesauce
- 50 g coconut oil
- 1 teaspoon vanilla
- 4 eggs
- 220 ml almond milk
- 200 g whole wheat flour
- 100 g rolled oats
- 5 g baking soda
- 5 g baking powder
- 5 g ground cinnamon
- 15 g poppy seeds
- 30 g coconut flakes
- 100 g chopped walnuts
- Zest of an orange
