Cauliflower Tortillas

Preheat the oven to 190ºC.

Crush the cauliflower. Microwave for 2-3 minutes.

Squeeze out the extra juice from the cauliflower.

Whisk the eggs.

Squeeze the lemon.

Add in cauliflower, coriander, corn flour, salt and pepper. Mix well

Shape 6 small tortillas and place them in a baking tray with parchment paper

Bake for 8 min on each side

  • 3/4 cauliflower head
  • 2 eggs
  • Juice of half of one lemon
  • Coriander
  • Salt
  • Pepper
  • Corn or whole wheat flour
