Pumpkin and Chia Granola

Preheat oven to 175˚C; combine all dry ingredients and mix well.

In a sauce pan, at medium heat, combine the pumpkin purée, coconut oil, maple syrup and vanilla. Whisk to keep the oil from separating.

Combine dry and wet ingredients.

Mix well until all ingredients become coated.

Pour granola mixture into the baking sheet.

Spread out into a thin layer.

Bake for 22-24 minutes, stirring half way through baking.

- 300 g rolled oats
- 100 g chopped walnuts
- 20 g chia seeds
- 5 g cinnamon
- 20 g flax seeds
- 1/2 g salt
- 80 g shredded Coconut
- 3 g cardamom pods
- 160 g pumpkin puree
- 5 ml vanilla
- 100 ml maple syrup
- 60 ml coconut oil
