Turkey Meatball Tortellini Soup

Combine the ground turkey, breadcrumbs, egg, parsley, garlic, salt and Parmesan cheese.

In a large non-stick pot, add 30 g of olive oil over medium-low heat.

When heated, add the celery, onion, carrot and garlic. Cover and reduce heat to low. Cook for 5-6 minutes.

Add the chicken broth and increase heat to medium-high and bring to a boil. Season with black pepper.

Form small meatballs, about the size of a walnut.

Reduce heat to medium and gently drop in the meatballs.

Cook about 4 minutes.

Add the tortellini and simmer until cooked according to package directions.

Add the baby spinach and top with freshly grated parmesan. Stir to combine and serve.

Meatball:
  • 300 g ground turkey
  • 15 g breadcrumbs
  • 1 egg
  • 10 g parsley
  • 1 clove of garlic
  • 1 g salt
  • 15 g parmesan cheese
Soup:
  • 2 stalks of celery
  • 1 onion
  • 1 carrot
  • 1 clove of garlic
  • 425 ml chicken broth
  • 300 g tortellini pasta
  • 30 g baby spinach
